Rustic Cornbread Skillet

Yield 8 slices

Ingredients for Filling
1 tablespoon avocado oil
1 onion, diced
3 garlic cloves, minced
1 bell pepper, diced
1 pound Beyond Meat Plant-Based Ground
½ jalapeño, seeded and finely chopped
1 cup organic frozen corn
2 teaspoon Mexican Fiesta seasoning
1 ½ teaspoon chili powder
½ teaspoon sea salt
Pepper, to taste

Ingredients for Cornbread Topping
1 cup cornmeal
1 cup all-purpose flour
1 tablespoon baking powder
1/2 teaspoon sea salt
1 cup oat or soy milk
1/4 cup olive oil
1/4 cup maple syrup
Garnish with sour cream, fresh cilantro, and zesty salsa

Directions
Preheat your oven to 375°F.  In a cast iron skillet, sauté the onions in avocado oil over medium heat for about 3 minutes until they start to soften. Add the bell pepper and Beyond Meat Plant-Based Ground, breaking up the meat as it cooks. When the meat is nearly browned, stir in the jalapeño, corn, garlic, Mexican Fiesta seasoning, chili powder, sea salt, and pepper. Continue cooking for a few additional minutes, stirring occasionally. Remove the skillet from heat and set it aside.

For the cornbread topping, sift together the cornmeal, flour, baking powder, and sea salt in a mixing bowl.  Add the oat or soy milk, olive oil, and maple syrup, whisking until the batter is smooth.  Pour the cornbread batter evenly over the vegetable filling in the skillet.

Bake uncovered for 25-30 minutes.  Check for doneness by inserting a toothpick into the cornbread. If it comes out clean, it’s ready. Once baked, remove from the oven and let it cool for a few minutes to set the cornbread.  Garnish with sour cream, fresh cilantro, and zesty salsa.

Feel free to experiment with different fillings to create your own unique version. For a lighter option, omit the meat and add more veggies such as chopped zucchini, broccoli, mushrooms, spinach, or any of your favorite vegetables. The versatility of this dish allows you to customize it to your taste and dietary preferences.
