White Cheddar & Broccoli

Who doesn’t love cheeeeeese?  Welp, ME!  That was one of the last things to change in my diet… Welcome to an Easy Peasy White Cheddar recipe that is so versatile you can use it on macaroni, veggies, and much more!  If you try it, let me know your thoughts in the comments below and upload your image!

Yields 4 servings of white cheddars
Ingredients
1 cup of broccoli per serving
2 tablespoons avocado oil
1/2 cup raw cashews, soaked overnight, drained *
1 cup water
3 1/2 tablespoons tapioca starch
3 tablespoons nutritional yeast
2 teaspoons white balsamic vinegar or apple cider vinegar
1/4 teaspoon sea salt
1/4 teaspoon garlic powder
Directions
For roasted broccoli, lightly drizzle your preferred amount of broccoli with avocado oil and  bake 375°F for 20 minutes.  For a lighter option, steam the broccoli to your desired tenderness.

While your broccoli is cooking, combine the soaked cashews and water in the Twister Jar attachment for the Blendtec or a high-speed blender; blend until smooth and creamy.  Pour the mixture into a small saucepan, and add the tapioca starch, nutritional yeast, white balsamic vinegar, sea salt, and garlic powder.  Cook over low heat, stirring intermittently until the cheese sauce thickens.  This process may take several minutes, so be patient.

Pour over broccoli, and top with vegan Parmesan…..
