Easy Roasted Broccoli Soup

Ingredients
broccoli (about one bunch)
two onions
one bulb garlic
3/4 cup Parmesan cheese
3/4 cup heavy cream
avocado oil spray
1 carton of chicken broth (or preferred broth)
nutritional yeast (for topping)
hemp seeds (for topping)
red chili flakes (for topping)

Instructions:
Preheat the oven to 450°F. Arrange broccoli, onions, and garlic on a baking sheet and spray with avocado oil. Roast for about 30 minutes or until the vegetables are soft and slightly charred. Transfer the roasted vegetables to a large pot, squeezing out the garlic from the clove, add the chicken broth, and simmer briefly to combine flavors. Blend the mixture in a high-speed blender until smooth, then return to the pot. Stir in the Parmesan cheese and heavy cream until creamy and well combined. Serve with a sprinkle of nutritional yeast, hemp seeds, and red chili flakes on top for added flavor and texture.
