Cheap & Easy Potato Chowder
For a week I’ll have limited access to my kitchen while the painters give it a fresh and new look; so I decided to use whatever I had readily available and whip up something hearty to feed my teen son who is ravenously hungry 24/7 on the cheap and easy.
POTATO CHOWDER
Yields 4 hearty servings
2 yellow onions
6 cloves garlic
2 T coconut oil
3 celery, diced
1 large carrot, chopped
2 baby red bells
2 baby orange bells
6 mini red potatoes, chopped
1 tsp sea salt
6 c broth and or broth and water combined
Saute onions and garlic in coconut oil for 5 to 7 minutes, add celery and saute an additional 2 minutes. Add the remaining ingredients and bring to boil. Reduce heat to low boil for approx. 35 minutes until potatoes are fork tender; emulsify with a hand held blender, leaving your chowder a bit chunky, something to chew on, and enjoy.
Garnish Ideas: pesto and hemp seeds
Try to mix up your chowder with whatever you have handy in the kitchen, maybe cauliflower or broccoli, kale or mustard greens. Be creative and Enjoy your custom-made chowder.
