Spicy Cannellini & Sweet Potato Soup
Ingredients
1 small yellow onion, diced
1 small red onion, diced
2 tablespoons avocado oil
1 sweet potato, peeled and diced
5 mini bell peppers in various colors, diced
2 tablespoons sun-dried tomato oil
5 sun-dried tomatoes, chopped and seasoned with Italian herbs
1 1/2 tablespoons Italian seasoning
1/4 serrano pepper, minced (use less if you prefer milder heat)
1 carton chicken broth
1 whole garlic bulb, minced
2 large handfuls of southern greens (such as collards or turnip greens), chopped
2 chicken sausages, vegan Italian sausage, or 1 cup chopped chanterelle mushrooms
1/2 cup heavy cream
1/2 cup grated Parmesan cheese
Directions
In a large pot over medium heat, sauté the diced yellow and red onions in the avocado oil until softened. Meanwhile, peel and dice the sweet potato, and dice the mini bell peppers. Add both to the pot with the onions, along with the sun-dried tomato oil, chopped sun-dried tomatoes, Italian seasoning, and minced serrano pepper. Stir and let everything cook together, then pour in the chicken broth.
As the sweet potatoes soften over medium-high heat, mince the whole garlic bulb. Once the potatoes are tender, add the garlic to the pot for an extra burst of flavor, along with the chopped southern greens.
While everything simmers, cook the chicken sausages (or vegan Italian sausage or chanterelle mushrooms) in a separate pan. Once cooked, cut the sausage into small pieces and add it to the soup. Finally, stir in the heavy cream and Parmesan cheese, letting everything meld together into a creamy, savory soup. Enjoy!
