Tomato Basil Gazpacho
Yields 2 servings
Ingredients
3 vine-ripened tomatoes, divided
2 inches English cucumber, diced
1 garlic, minced
½ red bell pepper, diced
½ green bell pepper, diced
1 tablespoon fresh basil, minced
1 tablespoon olive oil
2 tablespoons lemon juice
½ teaspoon sea salt
Dash pepper
Directions
Core 2 tomatoes and slice in half. Place the tomato seed-side against a hand held grater, and shred tomato over a bowl by sliding it back and forth until only the skin remains; discard tomato skins. Pour tomato liquid into a high speed blender and blend for 45 seconds until creamy. Set aside.
Core and dice 1 tomato; pour into a large bowl and add all remaining ingredients. Top with creamy tomato from the blender and stir. Divide and ladle into two small serving glasses and chill in the refrigerator for at least 1 hour.
